This variety comes to us from the Bob-O-Link cooperative.
The Bob-o-Link is a species of migratory bird that is finding it increasingly difficult to follow its journey from Patagonia to the north of the hemisphere because of the monocultures that are spreading out all over America. If Bob-o-Link coffee pays tribute to him by bearing his name, it is because it is the fruit of a reasoned culture where respect for the environment and the people is placed at the heart of the concerns.
This project, initiated by Marcos Croce on his farm, is now supported by more than 50 Brazilian producers. The producers associated with this project only harvest cherries by hand, in a very selective way, at the best moment of their maturity. A manual harvest that goes against the image of the mechanical harvest usually associated with Brazil.
