The intensity of a preserved terroir

 The Number 9 - 2026 - Indonesian Specialty Coffee is an invitation to discover another facet of great specialty coffees. Grown on the volcanic slopes of Flores Island, Indonesia, it expresses all the richness of a still preserved terroir, where coffee cultivation remains intimately linked to local traditions.


 Made exclusively from the Yellow Bourbon variety, this coffee reveals a unique identity, shaped by the altitude, the volcanic soils and the know-how of the producers of Waerebo, an isolated village nestled in the heart of the mountains, accessible only after several hours of walking.


 Hand-roasted in our workshop in Martinique, Number 9 reveals a deep, balanced and remarkably precise cup, where freshness, indulgence and complexity harmonize with elegance.

  • A roasting process that serves the local terroir

    Each cafe has its own rhythm.

    For No. 9 , we developed a precise roasting curve to preserve the full aromatic complexity of this exceptional origin. Our goal is to reveal the natural sweetness of Yellow Bourbon while highlighting the citrus freshness and the depth of the cocoa notes.

    This approach allows us to obtain a structured, expressive and particularly balanced cup, true to the unique character of the Flores terroir.

    Like all La Réminiscence coffees, Number 9 is roasted in small batches to guarantee optimal freshness.

  • The terroir

    In the heart of the mountains of western Flores Island lies Waerebo , a traditional village surrounded by lush forest and particularly fertile volcanic land.

    Coffee is grown there at altitudes between 1,100 and 1,700 meters , in an environment where harvesting is still done by hand. The altitude and significant temperature variations promote a slow ripening of the cherries, allowing the bean to develop a rich aromatic profile.

    Number 9 comes exclusively from the Bourbon Yellow variety, renowned for its elegance and sweetness.
